姜科植物姜 Zingiber officinale Rosc. 的新鲜根茎。
Gingembre est le rhizome de la plante du gingembre, Zingiber officinale, orginaire d'Asie,
du genre des Zingiber et de la famille des Zingiberaceae.
La racine de gingembre est utilisée en Chine et en Asie pour la Cuisine et pour la Médecine Traditionnelle.
Récemment, elle est préssée pour son jus présenté en forme de sirop comme boisson.
Chaude, la capsaïcine du gingembre peut stimuler la muqueuse gastro-intestinale et la circulation du sang des voies gastro-intestinales,
de renforcer la capacité de digestion.
Il est efficace contre les effects négatifs des aliments froids excessifs: les ballonnements, douleurs abdominales,
diarrhée, vomissements. Après avoir mangé le gingembre, on aura la sensation de la chaleur du corps,
car il peut faire dilater les vaisseaux sanguins, accélérer la circulation sanguine
et ouvrir les pores pilleux du corps, évacuant la chaleur excessive en même temps que les bactéries corporelles.
Lorsque l'on a mangé les aliments froids, ou bien avoir été arrosé par une forte pluie, ou encore avoir resté trop longtemps
dans un environnement climatisé, le gingembre efface les inconforts du corps à cause des muscles refroidis.
Son goût piquant, poivré et citronné permet de multiples utilisations dans les boissons chaudes et froides: kir,
punch, diabolo, thé, infusion, vin chaud.
En cuisine il rehausse une sauce, un plat, un dessert.
En dégustant le sirop Monplaisir à la petite cuillère ou dilué
vous ne passez pas à côté des bienfaits étonnants du gingembre.
Il est apprécié dès l'antiquité pour son arôme et pour ses propriétés médicinales.
Les Grecs l'utilisaient comme remède plutôt qu'en cuisine.
Enfin des études montrent ses aspects quelques peu paradoxaux :
de saveur plutôt feu, le gingembre est anti-inflammatoire et c'est un antioxydant,
antiseptique, fébrifuge, dépuratif.
Il agit contre le mal des transports, les nausées des femmes enceintes, protège des risques cardio-vasculaires,
facilite la digestion, éclaircit la vue, éveille l'intellect, revitaliser les muscles.
C'est un excellent stimulant général.
A déguster tel quel sur un glaçon c'est bon pour la digestion; comme un sirop, 2cl dans un verre d'eau c'est bon
pour le tempo; à l'apéro 1cl dans un verre de vin blanc c'est étonnant.
Comme le miel on peut l'utiliser dans toutes les boissons chaudes ou froides.
Quand on apprécie son parfum acidulé-poivré on peut réinventer la cuisine de l'entrée au dessert.
